In 2015, Empyrical planted 400 perry pear trees on a south-facing slope in Snohomish, Washington. This spring, we celebrate the 10 year anniversary of that planting with an inaugural Perry Club. Many of our offerings are single or dual varietal perrys. In order to highlight the diversity of varietals and combinations, we fermented clean and cool with Cote des Blanc yeast. All of our perrys are bottle conditioned and disgorged of sediment. Perry is difficult, expensive and time-consuming to make compared with cider. Availability of varieties cannot be guaranteed every year, or even every two years. We feel accomplished at this moment to offer the largest selection of perry available in North America. Archive - Award-winning barrel-aged perry. This blend of English perry pears was aged for 18 months in barrel, then finished Methode Traditionelle with a dosage of fresh pear juice. Notable VA is complemented by fruit esters. Edging toward oaked sherry as it ages. Finished semi-dry, the abundant pear and barrel tannins are balanced by sweetness. 2024 GLINTCAP Best in Class. 2024 NWCC medalist.
Principle - A blend of Hendre Huffcap, Winnals Longdon and Theilersbirne. Resinous botanical aroma. The oak-aged "Archive" was blended in at 15% by volume. Finished semi-sweet a la Methode Traditionelle. 2025 GLINTCAP Best in Class.
Pyriform - Duel Varietal - Schweizer Wasserbirne and Winnals Longdon. The fruit from this harvest was very small, and consequently the impression of fresh, sharp, tannic pear skin dominates the flavor of this batch. Finished barely off-dry a la Methode Traditionelle, with fresh Comice pear juice. Limited quantity available. 2025 GLINTCAP Best in Class.
Parametric - Single varietal - Comice. Relatively light (low tannin) flavor of dessert pear. Medium acidity with a soft natural bubble. Finished off-dry. 2025 GLINTCAP Best in Class
Paradigm - Duel Varietal - Theilersbirne and Thorn. Mostly Theilersbirne, a full bittersharp pear with mouth-coating astringency. To moderate, we include a fraction of the relatively sweet Thorn perry pear, and dosage with sugar after digorgement (off-dry).
Practice - Single varietal - Comice. Cryo-concentrated pear must fermented with Cote des Blanc. Finished pet nat and disgorged with no dosage. Naturally off-dry. Limited quantity available.
Barland - Single varietal. Very sharp with med-low tannin. Distinctive fruit cocktail aroma. Green rind of an overripe honeydew. Finished off-dry. Limited quantity available.
Hendre Huffcap - Single varietal. Floral forward, with melon. Finished off-dry. Limited quantity available.
Inversion - Pear Cider. Bittersharp blend of Golden Russet, Spitzenberg, Winter Banana and Porter's Perfection. Finished semi sweet ala Methode Traditionelle with an oaked perry blended together with fresh perry pear and comice pear juice.
